It seems that if I want to stay anywhere close to the "3-on, 1-off" plan, I'm going to have to put in a Sunday workout here and there. Since I'm fairly anal rententive, I mapped out 7 weeks of a "no-Sunday" workout schedule, and because I'm trying to avoid "5-on" and "6-on" scenarios, it just doesn't work out very well unless I allow the occasional Sunday workout.
As a result, I'll go with the usual "3-on, 1-off plan", and I'll also use a "4-on, 1-off, 2-on, 1-off" (or reverse) plan here and there if it will help me avoid a Sunday WOD. Mildly apologetic to anyone this affects. But just mildly.
